How to Use Cold Pressed Sesame (Gingelly) Oil

Yes — gingelly oil is simply the South Indian name for sesame oil, derived from the Tamil word “Ellu” (sesame seed). In Tamil Nadu and Kerala, it is most commonly called gingelly oil or nallennai. It is the same oil pressed from sesame seeds (Sesamum indicum). Cold pressed gingelly oil retains its natural nutrients; refined versions do not.

What is the difference between cold-pressed sesame oil and refined sesame oil?

Refined sesame oil is processed with heat and chemical solvents (hexane) that strip away natural nutrients, flavour, and aroma.
