Pressure Cooker Mutton Biryani

A flavour-packed mutton biryani made in a pressure cooker – perfect for when you want authentic biryani taste without the 2-hour dum cooking process. The pressure seals in all the aromatics and juices, producing tender, fragrant mutton and perfectly cooked basmati.

Ingredients

  • 750g mutton pieces (bone-in)
  • 2 cups basmati rice, soaked 30 mins
  • 3 tbsp Precious cold pressed groundnut oil
  • 2 large onions, thinly sliced (fry till crispy)
  • 1.5 tbsp ginger-garlic paste
  • 1 cup thick curd
  • 3 tsp biryani masala
  • 1.5 tsp red chilli powder
  • 1 tsp turmeric
  • 1 cup mint leaves
  • 1 cup coriander leaves
  • 4 green chillies, slit
  • Whole spices: 2 bay leaves, 4 cardamoms, 4 cloves, 1 cinnamon, 1 star anise
  • 2.5 cups water
  • Salt and ghee to finish

Step-by-Step Instructions

  1. Marinate mutton with curd, ginger-garlic paste, biryani masala, red chilli, turmeric, and salt for 2 hours minimum.
  2. Fry onions in oil until deep golden crispy. Remove half for garnish.
  3. In remaining oil, add whole spices. Add remaining onions and green chillies.
  4. Add marinated mutton. Cook on high heat for 8 minutes to seal.
  5. Add mint, coriander, and 1/2 cup water. Cover and pressure cook for 3 whistles. Rest 10 minutes.
  6. Open cooker. The mutton should be 80 percent cooked with gravy.
  7. Layer drained soaked rice over the mutton. Do not stir.
  8. Add 2 cups water poured gently around the edges. Season the water with salt.
  9. Add fried onions, remaining mint and coriander on top. Drizzle ghee.
  10. Close cooker, cook on low heat for 10 minutes without a whistle (dum method). Rest 10 minutes. Fluff and serve.
Chef's Tip: Resting the biryani after cooking is as important as the cooking itself – the steam continues to work and the rice absorbs the aromatic moisture. Precious cold pressed groundnut oil is the authentic fat of choice for biryani in South India.
