Ingredients

  • 500g chicken pieces (drumsticks or boneless)
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1.5 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp garam masala
  • 2 tbsp thick curd (yogurt)
  • 1 egg, beaten
  • 3 tbsp corn flour
  • 2 tbsp all-purpose flour
  • Salt to taste
  • Precious cold pressed groundnut oil for deep frying
  • Lemon wedges and onion rings to serve

Step-by-Step Instructions

  1. Clean and pat dry chicken pieces thoroughly with a kitchen towel.
  2. In a bowl, combine ginger-garlic paste, turmeric, red chilli powder, coriander powder, cumin, garam masala, curd, egg, and salt.
  3. Add chicken to the marinade and mix well to coat evenly.
  4. Cover and refrigerate for a minimum of 2 hours, ideally overnight for maximum flavour.
  5. Before frying, mix in corn flour and all-purpose flour to create a dry coating.
  6. Heat Precious cold pressed groundnut oil in a deep kadai to 170-180 degrees C.
  7. Fry chicken pieces in batches – do not overcrowd the pan – for 8-10 minutes, turning occasionally.
  8. Remove and drain on a wire rack or paper towels.
  9. Fry a second time for 3 minutes at high heat for extra crispiness (double-fry method).
  10. Serve hot with lemon wedges, sliced onions, and green chutney.
Chef's Tip: Precious cold pressed groundnut oil is ideal for deep frying – its high smoke point and natural antioxidants keep the oil stable at frying temperatures. The chicken absorbs less oil compared to refined alternatives.
