Crispy Fried Chicken
Golden, crunchy on the outside and juicy on the inside – this crispy fried chicken is a crowd-pleasing starter for any occasion. Marinated in a South Indian spice blend and fried to perfection, it disappears off the plate within minutes.

Ingredients
- 500g chicken pieces (drumsticks or boneless)
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1.5 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp garam masala
- 2 tbsp thick curd (yogurt)
- 1 egg, beaten
- 3 tbsp corn flour
- 2 tbsp all-purpose flour
- Salt to taste
- Precious cold pressed groundnut oil for deep frying
- Lemon wedges and onion rings to serve
Step-by-Step Instructions
- Clean and pat dry chicken pieces thoroughly with a kitchen towel.
- In a bowl, combine ginger-garlic paste, turmeric, red chilli powder, coriander powder, cumin, garam masala, curd, egg, and salt.
- Add chicken to the marinade and mix well to coat evenly.
- Cover and refrigerate for a minimum of 2 hours, ideally overnight for maximum flavour.
- Before frying, mix in corn flour and all-purpose flour to create a dry coating.
- Heat Precious cold pressed groundnut oil in a deep kadai to 170-180 degrees C.
- Fry chicken pieces in batches – do not overcrowd the pan – for 8-10 minutes, turning occasionally.
- Remove and drain on a wire rack or paper towels.
- Fry a second time for 3 minutes at high heat for extra crispiness (double-fry method).
- Serve hot with lemon wedges, sliced onions, and green chutney.
Chef's Tip: Precious cold pressed groundnut oil is ideal for deep frying – its high smoke point and natural antioxidants keep the oil stable at frying temperatures. The chicken absorbs less oil compared to refined alternatives.
