Creamy Tomato Pasta

A simple, satisfying creamy pasta with a rich tomato sauce that comes together in under 30 minutes. Made with pantry staples – canned tomatoes, cream, garlic, and Italian herbs – this is the kind of weeknight pasta that becomes a household favourite.

Ingredients

  • 250g pasta (penne or rigatoni)
  • 2 tbsp Precious cold pressed groundnut oil
  • 5 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 400g canned crushed tomatoes or 4 fresh tomatoes, pureed
  • 1/2 cup fresh cream
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red chilli flakes
  • Salt and black pepper to taste
  • Parmesan or any hard cheese to serve
  • Fresh basil to garnish

Step-by-Step Instructions

  1. Cook pasta in generously salted boiling water per package instructions. Reserve 1/2 cup pasta water before draining.
  2. Heat oil in a wide pan over medium flame. Add minced garlic and fry until golden and fragrant, about 1 minute.
  3. Add onion and cook until translucent.
  4. Add tomato puree or crushed tomatoes. Season with salt, pepper, oregano, basil, and chilli flakes.
  5. Simmer the sauce for 12-15 minutes until it thickens and deepens in colour.
  6. Reduce heat to low. Stir in fresh cream slowly.
  7. Add drained pasta to the sauce. Toss well, adding reserved pasta water a little at a time for the right consistency.
  8. Taste and adjust seasoning. Simmer on low for 2 minutes so pasta absorbs sauce.
  9. Serve in bowls, topped with grated cheese and fresh basil.
