⏱ Prep: 10 mins🍳 Cook: 20 mins⌛ Total: 30 mins🍕 Serves: 3
Ingredients
- 250g pasta (penne or rigatoni)
- 2 tbsp Precious cold pressed groundnut oil
- 5 cloves garlic, minced
- 1 medium onion, finely chopped
- 400g canned crushed tomatoes or 4 fresh tomatoes, pureed
- 1/2 cup fresh cream
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red chilli flakes
- Salt and black pepper to taste
- Parmesan or any hard cheese to serve
- Fresh basil to garnish
Step-by-Step Instructions
- Cook pasta in generously salted boiling water per package instructions. Reserve 1/2 cup pasta water before draining.
- Heat oil in a wide pan over medium flame. Add minced garlic and fry until golden and fragrant, about 1 minute.
- Add onion and cook until translucent.
- Add tomato puree or crushed tomatoes. Season with salt, pepper, oregano, basil, and chilli flakes.
- Simmer the sauce for 12-15 minutes until it thickens and deepens in colour.
- Reduce heat to low. Stir in fresh cream slowly.
- Add drained pasta to the sauce. Toss well, adding reserved pasta water a little at a time for the right consistency.
- Taste and adjust seasoning. Simmer on low for 2 minutes so pasta absorbs sauce.
- Serve in bowls, topped with grated cheese and fresh basil.
Chef's Tip: Pasta water is your secret weapon – the starch makes the sauce clingy and glossy. Precious cold pressed groundnut oil is a lighter, healthier alternative to butter for sauteing the garlic base.
Cook with authentic cold pressed oils — the difference is in every bite.
